About the Book
This book prepares candidates for the Food Technology section of the GATE Engineering Sciences (XE) and Life Sciences (XL) papers. It brings the full subject into one volume, organised the way the examination treats it rather than as a loose collection of notes.
The concept chapters cover the working syllabus: food chemistry, food microbiology, nutrition, thermal and non-thermal processing, food and process engineering, unit operations, packaging technology, and analytical methods. Each topic is explained in plain language, with the governing equations, labelled diagrams, and step-by-step derivations that a candidate needs to solve problems under time pressure. The emphasis stays on understanding a principle well enough to apply it to an unfamiliar question, not on memorising isolated facts.
The closing part of the book is a fully solved question bank. It covers every Food Technology (XE-G) question from GATE 2021 to 2026, close to 130 questions across the six papers. Each one is presented with its options, the correct answer, a detailed explanation, and a clear account of why the remaining options are wrong. Numerical questions are worked out in full, and multiple-select and matching questions are resolved entry by entry.
Running through the solutions are the areas that recur year after year: thermal-death kinetics, mass balances on drying and evaporation, size-reduction laws, and the microbiology of fermented foods. Highlighting these lets a reader spend revision time where the marks actually sit.
The book suits both a first full pass through the subject and focused revision in the final weeks before the examination.
